6 Valentine Breakfast Ideas

I love Valentine’s Day! An opportunity to show someone how much you love them showering them with special treats and gifts. I like to show my husband everyday of course:) I have always loved making breakfast fun and decorating it with different themes. I remember when I was younger we would make waffles with faces on them with fruit and whip cream. It helped put a smile on your face with your first meal of the day. Valentine’s Day is no exception. There are so many ideas out there from toast to pancakes to milkshakes, these are some of my favorite breakfast ideas. Enjoy!

Chicken Black Bean and Corn Wrap

 Taco seasoned chicken, black beans, corn, turkey bacon, leafy lettuce wrapped in a spinach veggie tortilla - fabulous!!!


A couple of weeks ago I found myself searching for a quick and easy meal to cook for lunch after church. As I starred at the contents of my fridge a recipe came to mind. My mom has a recipe for chicken, black beans and corn enchiladas with flour tortillas, it is delicious but requires about 30 minutes and I needed my meal prepared in half the time. Why not make it into a wrap! This recipe is husband approved and only 315 calories which is always a plus. You can take out the chicken and bacon and add some avocado and tomato to make it a veggie wrap.

I ate this the next day for lunch over a fresh green salad and a drizzle of ranch dressing. Tastes great reheated.


Chicken Black Bean and Corn Wrap

Servings: 4, Size: 1 wrap, Calories: 315, Carbs: 39, Fat: 12 g, Protein: 18 g, Sugar: 3 g, 
Sodium: 646 mg

Ingredients:
  • 1.5 cups of cooked chicken, shredded
  • 15 oz can of reduced sodium black beans, drained and rinsed
  • 1 cup of sweet corn (I used frozen corn)
  • 2 tablespoons of taco seasonings
  • 4 spinach tortilla wraps
  • 1/4 cup of Colby jack cheese 
  • 4 leaves of leafy lettuce
  • 4 slices of turkey bacon

Directions:

Combine chicken, black beans, corn, and taco seasoning in a bowl and mix together. 



Saute in a sauce pan until warmed up and set aside.


Next warm up your warps on a griddle until lightly toasted.


Now lay your wrap on a plate and add a cup of chicken mixture. Sprinkle some cheese over the chicken and add the bacon and lettuce.





Next fold the ends of the wrap in and roll your wrap like a burrito. Cut and serve with fresh raw carrots and celery and enjoy.

Cilantro Pesto



Last week I came across a delicious recipe for basil pesto pizza and couldn't wait to make it. I grew up with traditional Mexican foods and fast food. So pesto was something I had never made but knew it was easy to prepare. I didn't have basil on hand but had some wilted cilantro and thought hey why not substitute it for the basil. To my surprise it came out amazing! I've used this a few times since with pizza, chicken and roast. Mm mm it's delicious and diverse, it adds a layer of flavor without over taking the taste of the meal.


Cilantro Pesto

Servings: 16, Size: 1 tbsp, Calories: 38, Carbs: 1, Fat: 4 g, Protein: 1 g, Sugar: 0 g, 
Sodium: 25 mg

Ingredients: 
  • 1 cup of cilantro
  • 1/4 cup of pine nuts
  • 3 cloves of garlic, minced
  • 1/4 cup of grated Parmesan cheese
  • 1 seeded jalapeno
  • 1/4 cup of extra virgin olive oil (evoo)
  • juice of half a lime, about 3 tbsp
  • a pinch of salt
Directions:

Toast the pine nuts for a couple of minutes in a sauce pan then add to a food processor.
Next add the rest of the ingredients except the olive oil and pulse a few times.





While the the ingredients are being chopped add in your evoo.



After a few seconds push down pesto from the sides and process again for about a minute or until smooth.

Mayo-less Tuna Salad



Canned tuna combined with fresh tomato,white onion,jalapeno,cilantro and lime mixed to perfection!

I love tuna for lunch because its easy to pack with some organic tortilla chips or crackers. Since it doesn't contain mayonnaise, this recipes becomes a healthy choice with only 142 calories! 



You can also have this over some spinach or romaine lettuce to make it a bit more filling with out adding too many calories to your meal. 

Tuna Pico de Gallo

Servings: 1, Size: 1.5 cup, Calories: 142, Carbs: 10, Fat: 1 g, Protein: 23 g, Sugar: 5 g, 
Sodium: 366 mg (without salt) 

Ingredients:
  • 5 oz can of albacore tuna (in water), drained
  • 1 Roma tomato, diced 
  • 1/2 a Jalapeno, seeded
  • 2 sprigs fresh cilantro, 
  • 1/4 cup of white onion
  • 1/2 a lime wedge
Directions:

Combine onion, cilantro and jalapeno in food processor and pulse a few times until finely chopped. If you don't have a processor you can chopped ingredients with a knife. 



Spoon out mixture into a medium size bowl.

Combine tuna and tomato to mixture and squeeze half a lime and mix together. 

Serve with organic blue chips.  (Nutrition Facts not included in recipe)
